Fiordilatte cheese (fior-di-latte meaning "top-of-the-milk") is a fresh pulled-curd cheese ("a pasta filata") typical from the Central and South Italy, especially Campania.
The transformation process is similar to that of the cow-milk mozzarella cheese: the difference here is the shape and the consistency of the paste.
Whole cow milk, from one or more consecutive milking’s to be done within a 16 hours window, is engrafted with whey and coagulated with calf rennet.
Once broken, the curd is ripened and pulled while adding almost boiling water, while the curing is done either before or after the pulling.
